Ingredients

  • 2 medium apples, peeled, cored, and thinly sliced
  • 1 tablespoon butter
  • 1 tablespoon brown sugar or honey
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract

  • 1 cup shredded mozzarella or cheddar cheese
  • Cooking spray or additional butter for skillet

  3. Lay tortillas flat and sprinkle cheese evenly over half of each tortilla.
  4. Spoon the apple mixture over the cheese, then fold tortillas in half.
  5. Lightly grease a skillet and cook quesadillas over medium heat for 2–3 minutes per side, until golden brown and cheese is melted.
  6. Remove from skillet, cut into wedges, and serve warm.
