Ingredients
- 2 cups cooked long-grain rice
- 1 tbsp olive oil or butter
- 1 small onion, finely chopped
- 2 celery stalks, diced
- 1 apple, peeled and diced
- 1/2 cup dried cranberries
- 1/2 cup vegetable or chicken broth
- 1/2 tsp dried thyme
- 1/2 tsp dried sage
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1/4 cup chopped pecans or walnuts (optional)
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Heat olive oil or butter in a large skillet over medium heat.
- Add onion and celery; sauté until softened.
- Stir in diced apple and cook for 2–3 minutes.
- Add dried cranberries, thyme, sage, salt, and black pepper.
- Pour in broth and simmer for 3–4 minutes.
- Add cooked rice and stir to combine evenly.
- Cook for another 3–5 minutes until heated through.
- Stir in nuts and fresh parsley if using.
- Serve warm as a side dish or stuffing.
Notes
- Use brown rice for a heartier texture.
- Can be baked at 180°C (350°F) for 15 minutes for a casserole-style finish.
- Add sausage for a non-vegetarian version.
