Description

Apple-Cranberry Rice Stuffing is a flavorful and festive side dish made with tender rice, sweet apples, tart cranberries, and aromatic herbs, perfect for holiday meals or cozy dinners.


Ingredients

  • 2 cups cooked long-grain rice
  • 1 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 2 celery stalks, diced
  • 1 apple, peeled and diced
  • 1/2 cup dried cranberries
  • 1/2 cup vegetable or chicken broth
  • 1/2 tsp dried thyme
  • 1/2 tsp dried sage
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tbsp chopped fresh parsley (optional)


Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add onion and celery; sauté until softened.
  3. Stir in diced apple and cook for 2–3 minutes.
  4. Add dried cranberries, thyme, sage, salt, and black pepper.
  5. Pour in broth and simmer for 3–4 minutes.
  6. Add cooked rice and stir to combine evenly.
  7. Cook for another 3–5 minutes until heated through.
  8. Stir in nuts and fresh parsley if using.
  9. Serve warm as a side dish or stuffing.

Notes

  • Use brown rice for a heartier texture.
  • Can be baked at 180°C (350°F) for 15 minutes for a casserole-style finish.
