Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup fresh blueberries
  • 1/4 cup chicken broth
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp butter (optional)


Instructions

  1. Season chicken breasts with salt, black pepper, and thyme.
  2. Heat olive oil in a skillet over medium heat.
  3. Sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
  4. In the same pan, sauté garlic for 30 seconds.
  5. Add blueberries, chicken broth, balsamic vinegar, and honey.
  6. Simmer 5–7 minutes until blueberries burst and sauce thickens slightly.
  7. Stir in butter if using for extra richness.
  8. Return chicken to the pan and spoon sauce over the top.
  9. Simmer 2–3 minutes to combine flavors.
  10. Serve warm with extra sauce spooned over chicken.
