Description
A comforting and flavorful Mexican garlic soup (Sopa de Ajo) made with toasted bread, rich broth, and plenty of garlic, often topped with eggs and fresh herbs.
Ingredients
- 6 cloves garlic (thinly sliced)
- 2 tablespoons olive oil
- 4 cups chicken broth
- 1/2 teaspoon paprika
- 1/4 teaspoon chili flakes (optional)
- 2 cups day-old bread (cubed)
- 2 large eggs
- Salt and black pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Heat olive oil in a pot over medium heat.
- Add sliced garlic and cook gently until fragrant and lightly golden (do not burn).
- Stir in paprika and chili flakes.
- Add chicken broth and bring to a simmer.
- Add cubed bread and cook for 5–7 minutes until softened.
- Crack eggs directly into the soup and let them poach for 3–4 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
- Use stale bread for best texture.
- Adjust spice level with chili flakes.
- Vegetable broth can be used for a vegetarian version (omit eggs if desired).
