Description

A comforting and flavorful Mexican garlic soup (Sopa de Ajo) made with toasted bread, rich broth, and plenty of garlic, often topped with eggs and fresh herbs.


Ingredients

  • 6 cloves garlic (thinly sliced)
  • 2 tablespoons olive oil
  • 4 cups chicken broth
  • 1/2 teaspoon paprika
  • 1/4 teaspoon chili flakes (optional)
  • 2 cups day-old bread (cubed)
  • 2 large eggs
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add sliced garlic and cook gently until fragrant and lightly golden (do not burn).
  3. Stir in paprika and chili flakes.
  4. Add chicken broth and bring to a simmer.
  5. Add cubed bread and cook for 5–7 minutes until softened.
  6. Crack eggs directly into the soup and let them poach for 3–4 minutes.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh cilantro and serve with lime wedges.

  • Use stale bread for best texture.
