Description

Boston Donuts (Boston Cream Donuts) are soft, fluffy yeast donuts filled with rich vanilla custard and topped with a smooth chocolate glaze for a classic, indulgent treat.


Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup sugar
  • 2 eggs
  • 1/4 cup unsalted butter, melted
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • Oil for frying
  • 2 cups milk (for custard)
  • 1/2 cup sugar (for custard)
  • 3 egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1/2 cup heavy cream


Instructions

  1. In a bowl, dissolve yeast in warm milk with a pinch of sugar and let sit for 5–10 minutes until foamy.
  2. Add sugar, eggs, melted butter, flour, and salt. Mix to form a soft dough.
  3. Knead dough for 8–10 minutes until smooth, then let rise for 1 hour until doubled.
  4. Roll out dough and cut into rounds. Let rise again for 30 minutes.
  5. Heat oil to 180°C (350°F) and fry donuts until golden on both sides. Drain and cool.
  6. Prepare custard: heat milk and sugar until warm. In a bowl, whisk egg yolks and cornstarch, then slowly add warm milk while whisking.
  7. Return mixture to heat and cook until thickened. Stir in vanilla and cool.
  8. Fill cooled donuts with custard using a piping bag.
  9. Heat cream and pour over chocolate chips to make glaze. Stir until smooth.
  10. Dip tops of filled donuts in chocolate glaze and let set before serving.
