Description
Boston Donuts (Boston Cream Donuts) are soft, fluffy yeast donuts filled with rich vanilla custard and topped with a smooth chocolate glaze for a classic, indulgent treat.
Ingredients
- 2 1/4 teaspoons active dry yeast
- 1/2 cup warm milk
- 1/4 cup sugar
- 2 eggs
- 1/4 cup unsalted butter, melted
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- Oil for frying
- 2 cups milk (for custard)
- 1/2 cup sugar (for custard)
- 3 egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1/2 cup heavy cream
Instructions
- In a bowl, dissolve yeast in warm milk with a pinch of sugar and let sit for 5–10 minutes until foamy.
- Add sugar, eggs, melted butter, flour, and salt. Mix to form a soft dough.
- Knead dough for 8–10 minutes until smooth, then let rise for 1 hour until doubled.
- Roll out dough and cut into rounds. Let rise again for 30 minutes.
- Heat oil to 180°C (350°F) and fry donuts until golden on both sides. Drain and cool.
- Prepare custard: heat milk and sugar until warm. In a bowl, whisk egg yolks and cornstarch, then slowly add warm milk while whisking.
- Return mixture to heat and cook until thickened. Stir in vanilla and cool.
- Fill cooled donuts with custard using a piping bag.
- Heat cream and pour over chocolate chips to make glaze. Stir until smooth.
- Dip tops of filled donuts in chocolate glaze and let set before serving.

- Let donuts cool before filling to avoid melting the custard.
- You can bake instead of fry for a lighter version.
