Description
A fresh and vibrant pasta salad inspired by classic Caprese flavors, featuring tender pasta tossed with cherry tomatoes, mozzarella, basil, and a light balsamic dressing.
Ingredients
- 12 oz (340 g) pasta (rotini or penne)
- 1 1/2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella balls (bocconcini), halved
- 1/3 cup fresh basil leaves, chopped
- 3 tbsp olive oil
- 2 tbsp balsamic glaze
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente.
- Drain the pasta and rinse under cold water to cool it down, then set aside.
- In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella, and chopped basil.
- In a small bowl, whisk together olive oil, balsamic glaze, minced garlic, salt, and black pepper.
- Pour the dressing over the pasta salad and toss gently to coat everything evenly.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
- Garnish with extra basil and a drizzle of balsamic glaze if desired, then serve chilled.
