Description

A fresh and vibrant pasta salad inspired by classic Caprese flavors, featuring tender pasta tossed with cherry tomatoes, mozzarella, basil, and a light balsamic dressing.


Ingredients

  • 12 oz (340 g) pasta (rotini or penne)
  • 1 1/2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella balls (bocconcini), halved
  • 1/3 cup fresh basil leaves, chopped
  • 3 tbsp olive oil
  • 2 tbsp balsamic glaze
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente.
  2. Drain the pasta and rinse under cold water to cool it down, then set aside.
  3. In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella, and chopped basil.
  4. In a small bowl, whisk together olive oil, balsamic glaze, minced garlic, salt, and black pepper.
  5. Pour the dressing over the pasta salad and toss gently to coat everything evenly.
  6. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  7. Garnish with extra basil and a drizzle of balsamic glaze if desired, then serve chilled.
