Description
Soft and chewy caramel cheesecake cookies made with a rich cream cheese dough and filled with gooey caramel, combining the flavors of cheesecake and cookies in one indulgent treat.
Ingredients
- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup caramel bits or soft caramel candies, chopped
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, cream cheese, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the caramel bits evenly throughout the dough.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12–14 minutes, or until the edges are set and lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Chill the dough for 30 minutes if it feels too soft to handle.
- Do not overbake; cookies should remain soft in the center.
- Store cookies in an airtight container in the refrigerator for best freshness.
