Cheesy Ground Beef Rice Casserole is a comforting baked dish made with seasoned ground beef, tender rice, creamy sauce, and melted cheese, perfect for an easy family dinner.
Ingredients
- 500 g ground beef
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup uncooked long-grain rice
- 480 ml beef broth
- 240 ml tomato sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp dried oregano
- 200 g shredded cheddar cheese
- 120 ml heavy cream or milk
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 180°C (350°F) and grease a baking dish.
- Heat olive oil in a skillet over medium heat.
- Add chopped onion and sauté until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until browned; drain excess fat.
- Stir in uncooked rice, beef broth, tomato sauce, salt, pepper, paprika, and oregano.
- Bring to a light simmer, then remove from heat.
- Stir in cream or milk and half of the shredded cheese.
- Transfer the mixture to the prepared baking dish.
- Cover tightly with foil and bake for 40 minutes.
- Remove foil, sprinkle remaining cheese on top, and bake uncovered for 10–15 minutes until cheese is melted and bubbly.
- Let rest for 5 minutes, garnish with parsley if desired, and serve.
Notes
- Use cooked rice to reduce baking time by 15 minutes.
- You can add peas or corn for extra vegetables.
- This casserole reheats well and is great for leftovers.
