Ingredients
- 24 ladyfinger biscuits
- 1 cup brewed espresso, cooled
- 1/4 cup amaretto liqueur
- 250 g mascarpone cheese
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 1/2 cups pitted cherries (fresh or jarred, drained)
- 2 tbsp cherry syrup (optional)
- 2 tbsp cocoa powder (for dusting)
- Dark chocolate shavings (optional garnish)
Instructions
- In a shallow bowl, combine cooled espresso and amaretto.
- In a mixing bowl, whip heavy cream until soft peaks form.
- In another bowl, beat mascarpone, powdered sugar, and vanilla extract until smooth.
- Gently fold whipped cream into mascarpone mixture.
- Quickly dip each ladyfinger into espresso mixture and arrange in a single layer in a serving dish.
- Spread half of mascarpone cream over the ladyfingers.
- Scatter half of the cherries over the cream and drizzle with cherry syrup if using.
- Repeat layers with remaining ladyfingers, cream, and cherries.
- Smooth the top and dust with cocoa powder.
- Garnish with chocolate shavings if desired.
- Refrigerate for at least 4 hours or overnight before serving.
