Description

Cherry Amaretto Tiramisu is a luscious twist on the classic Italian dessert, layering espresso-soaked ladyfingers with mascarpone cream, sweet cherries, and a splash of amaretto liqueur. Rich, creamy, and lightly boozy, this elegant no-bake dessert is perfect for special occasions.

Ingredients

  • 24 ladyfinger cookies (savoiardi)
  • 1 cup strong brewed espresso, cooled
  • 1/4 cup amaretto liqueur
  • 1 (8 oz) mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups cherry pie filling or sweetened cherries
  • 2 tablespoons unsweetened cocoa powder (for dusting)
  • Dark chocolate shavings (optional)

Instructions

  1. In a shallow bowl, combine cooled espresso and amaretto.
  2. Quickly dip each ladyfinger into the espresso mixture and arrange in a single layer in an 8×8-inch dish.
  3. In a large bowl, beat heavy cream until soft peaks form.
  4. In another bowl, mix mascarpone, sugar, and vanilla until smooth. Gently fold in whipped cream.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Spoon half of the cherry filling evenly over the cream layer.
  7. Repeat layers with remaining dipped ladyfingers, mascarpone cream, and cherries.
  8. Cover and refrigerate for at least 4 hours, preferably overnight.
  9. Before serving, dust with cocoa powder and garnish with chocolate shavings if desired.

Notes

  • For a stronger flavor, brush extra amaretto lightly over the layers.
  • Use fresh cherries cooked with sugar if pie filling is unavailable.
  • Do not oversoak ladyfingers to prevent sogginess.
  • Store refrigerated for up to 3 days.
