Ingredients
- 24 ladyfinger cookies (savoiardi)
- 1 cup strong brewed espresso, cooled
- 1/4 cup amaretto liqueur
- 1 (8 oz) mascarpone cheese, softened
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups cherry pie filling or sweetened cherries
- 2 tablespoons unsweetened cocoa powder (for dusting)
- Dark chocolate shavings (optional)
Instructions
- In a shallow bowl, combine cooled espresso and amaretto.
- Quickly dip each ladyfinger into the espresso mixture and arrange in a single layer in an 8×8-inch dish.
- In a large bowl, beat heavy cream until soft peaks form.
- In another bowl, mix mascarpone, sugar, and vanilla until smooth. Gently fold in whipped cream.
- Spread half of the mascarpone mixture over the ladyfingers.
- Spoon half of the cherry filling evenly over the cream layer.
- Repeat layers with remaining dipped ladyfingers, mascarpone cream, and cherries.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust with cocoa powder and garnish with chocolate shavings if desired.
Notes
- For a stronger flavor, brush extra amaretto lightly over the layers.
- Use fresh cherries cooked with sugar if pie filling is unavailable.
- Do not oversoak ladyfingers to prevent sogginess.
