Description
Chicken and Bacon Fried Rice is a savory, satisfying one-pan meal made with tender chicken, crispy bacon, fluffy rice, and vegetables tossed in a flavorful soy-based sauce.
Ingredients
- 3 cups cooked and cooled rice
- 300 g chicken breast, diced
- 5 slices bacon, chopped
- 2 tbsp vegetable oil
- 2 large eggs, beaten
- 1 cup frozen peas and carrots
- 3 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp green onions, sliced
Instructions
- Heat a large skillet or wok over medium-high heat.
- Add chopped bacon and cook until crispy. Remove bacon and set aside, leaving drippings in the pan.
- Add diced chicken to the pan and cook until browned and cooked through. Remove and set aside.
- Add vegetable oil to the pan if needed.
- Pour in beaten eggs and scramble until just set.
- Add garlic and frozen peas and carrots, stirring for 1–2 minutes.
- Add cooked rice and stir well to combine.
- Return chicken and bacon to the pan.
- Add soy sauce, sesame oil, salt, and black pepper.
- Stir-fry for 3–4 minutes until everything is heated through and evenly coated.
- Remove from heat, garnish with green onions, and serve hot.
Notes
- Use day-old rice for best texture.
- You can add extra vegetables like bell peppers or corn.
