Description

Chicken Pot Pie is a classic comfort food made with tender chicken, mixed vegetables, and a creamy savory sauce baked inside a flaky golden pie crust.


Ingredients

  • 2 cups cooked chicken, diced or shredded
  • 1 tbsp olive oil or butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 1 cup potatoes, diced
  • 3 tbsp all-purpose flour
  • 360 ml chicken broth
  • 120 ml milk or cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 package refrigerated pie crusts (2 crusts)
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Heat olive oil or butter in a large skillet over medium heat.
  3. Add onion and sauté until softened.
  4. Add garlic, carrots, and potatoes and cook for 5–7 minutes.
  5. Stir in flour and cook for 1 minute.
  6. Slowly add chicken broth and milk, stirring until thickened.
  7. Add cooked chicken, peas, salt, pepper, and thyme. Remove from heat.
  8. Place one pie crust into a pie dish.
  9. Pour the chicken filling into the crust.
  10. Cover with the second crust, seal edges, and cut small slits on top.
  11. Brush with beaten egg.
  12. Bake for 35–40 minutes until crust is golden brown.
  13. Let rest for 10 minutes before serving.

Notes

  • Use rotisserie chicken to save time.
  • Let the pie cool slightly to help the filling set.
  • You can substitute vegetables based on preference.
