Description
Chicken Pot Pie is a classic comfort food made with tender chicken, mixed vegetables, and a creamy savory sauce baked inside a flaky golden pie crust.
Ingredients
- 2 cups cooked chicken, diced or shredded
- 1 tbsp olive oil or butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup frozen peas
- 1 cup potatoes, diced
- 3 tbsp all-purpose flour
- 360 ml chicken broth
- 120 ml milk or cream
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1 package refrigerated pie crusts (2 crusts)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 200°C (400°F).
- Heat olive oil or butter in a large skillet over medium heat.
- Add onion and sauté until softened.
- Add garlic, carrots, and potatoes and cook for 5–7 minutes.
- Stir in flour and cook for 1 minute.
- Slowly add chicken broth and milk, stirring until thickened.
- Add cooked chicken, peas, salt, pepper, and thyme. Remove from heat.
- Place one pie crust into a pie dish.
- Pour the chicken filling into the crust.
- Cover with the second crust, seal edges, and cut small slits on top.
- Brush with beaten egg.
- Bake for 35–40 minutes until crust is golden brown.
- Let rest for 10 minutes before serving.
Notes
- Use rotisserie chicken to save time.
- Let the pie cool slightly to help the filling set.
- You can substitute vegetables based on preference.
