Ingredients

  • 1 9-inch pie crust, baked
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 4 large egg yolks
  • 4 oz semi-sweet chocolate, chopped
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 4 large egg whites
  • 1/2 teaspoon cream of tartar
  • 1/2 cup granulated sugar (for meringue)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a saucepan, whisk together sugar, cornstarch, and salt.
  3. Gradually whisk in milk and cook over medium heat until thickened and bubbling.
  4. Whisk a small amount of hot mixture into egg yolks, then return yolks to the saucepan.
  5. Cook for 2 minutes, stirring constantly.
  6. Remove from heat and stir in chocolate, butter, and vanilla until smooth.
  7. Pour chocolate filling into the baked pie crust.
  8. In a clean bowl, beat egg whites with cream of tartar until soft peaks form.
  9. Gradually add sugar and beat until stiff, glossy peaks form.
  10. Spread meringue over hot filling, sealing edges to crust.
  11. Bake for 12–15 minutes until meringue is lightly browned.
  12. Cool completely before slicing.
