Description
A flavorful and juicy chicken dish marinated with fresh cilantro, zesty lime juice, garlic, and spices, perfect for grilling, baking, or pan-searing.
Ingredients
- 1.5 lb (700 g) boneless skinless chicken breasts or thighs
- 1/4 cup fresh lime juice (about 2 limes)
- 1/4 cup olive oil
- 1/2 cup fresh cilantro, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon honey or sugar (optional)
Instructions
- In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, paprika, chili powder, salt, pepper, and honey if using.
- Add the chicken to the marinade and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, preferably 2–4 hours.
- Preheat grill to medium-high heat, or heat a skillet over medium heat with a little oil.
- Remove chicken from marinade and cook for 5–7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C).
- Remove from heat and let rest for 5 minutes before serving.
- Garnish with extra fresh cilantro and lime wedges if desired.
Notes
- Chicken thighs are juicier and more forgiving than breasts.
- Do not marinate longer than 12 hours to avoid mushy texture.
- This chicken pairs well with rice, salad, tacos, or wraps.
