Description

A flavorful and juicy chicken dish marinated with fresh cilantro, zesty lime juice, garlic, and spices, perfect for grilling, baking, or pan-searing.


Ingredients

  • 1.5 lb (700 g) boneless skinless chicken breasts or thighs
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup olive oil
  • 1/2 cup fresh cilantro, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon honey or sugar (optional)


Instructions

  1. In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, paprika, chili powder, salt, pepper, and honey if using.
  2. Add the chicken to the marinade and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, preferably 2–4 hours.
  3. Preheat grill to medium-high heat, or heat a skillet over medium heat with a little oil.
  4. Remove chicken from marinade and cook for 5–7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C).
  5. Remove from heat and let rest for 5 minutes before serving.
  6. Garnish with extra fresh cilantro and lime wedges if desired.

Notes

  • Chicken thighs are juicier and more forgiving than breasts.
  • Do not marinate longer than 12 hours to avoid mushy texture.
  • This chicken pairs well with rice, salad, tacos, or wraps.
