Description

Cinnamon Roll Blondies are soft, buttery blondies swirled with a rich cinnamon-sugar filling and finished with a sweet vanilla glaze. They combine the gooey comfort of cinnamon rolls with the ease of bar cookies.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 1/2 cups brown sugar, packed
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup unsalted butter, softened (for swirl)
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, mix melted butter and brown sugar until smooth.
  4. Add eggs and vanilla extract, mixing well.
  5. Stir dry ingredients into wet ingredients until just combined.
  6. In a small bowl, mix granulated sugar, cinnamon, and softened butter.
  7. Spread blondie batter evenly into prepared pan.
  8. Dollop cinnamon mixture over batter and swirl gently with a knife.
  9. Bake for 25–30 minutes until edges are set and center is slightly soft.
  10. Cool completely.
  11. Whisk powdered sugar, milk, and vanilla to make glaze.
  12. Drizzle glaze over cooled blondies, slice, and serve.
