Description

A classic crustless casserole made with tender herb-seasoned chicken, fresh vegetables, and melted cheese, baked until golden and comforting. Perfect for a low-carb, hearty family meal.


Ingredients

  • 2 cups cooked chicken breast, diced
  • 1 cup broccoli florets, chopped
  • 1 cup bell peppers, diced
  • 1/2 cup onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 large eggs
  • 1 cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt


Instructions

  1. Preheat the oven to 180°C (350°F) and lightly grease a casserole dish.
  2. Heat olive oil in a pan over medium heat and sauté onion until translucent.
  3. Add bell peppers and broccoli, cooking for 3–4 minutes until slightly tender.
  4. Spread the cooked vegetables evenly in the casserole dish and top with diced chicken.
  5. In a bowl, whisk eggs, milk, oregano, thyme, garlic powder, salt, and pepper.
  6. Pour the egg mixture evenly over the chicken and vegetables.
  7. Sprinkle cheddar and mozzarella cheese on top.
  8. Bake for 35–40 minutes, or until the center is set and the top is golden.
  9. Let rest for 5 minutes before slicing and serving.

Notes

  • You can substitute vegetables based on preference.
  • Use rotisserie chicken for convenience.
  • Allow casserole to cool slightly for cleaner slices.
