Description
A classic crustless casserole made with tender herb-seasoned chicken, fresh vegetables, and melted cheese, baked until golden and comforting. Perfect for a low-carb, hearty family meal.
Ingredients
- 2 cups cooked chicken breast, diced
- 1 cup broccoli florets, chopped
- 1 cup bell peppers, diced
- 1/2 cup onion, finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 4 large eggs
- 1 cup milk
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 180°C (350°F) and lightly grease a casserole dish.
- Heat olive oil in a pan over medium heat and sauté onion until translucent.
- Add bell peppers and broccoli, cooking for 3–4 minutes until slightly tender.
- Spread the cooked vegetables evenly in the casserole dish and top with diced chicken.
- In a bowl, whisk eggs, milk, oregano, thyme, garlic powder, salt, and pepper.
- Pour the egg mixture evenly over the chicken and vegetables.
- Sprinkle cheddar and mozzarella cheese on top.
- Bake for 35–40 minutes, or until the center is set and the top is golden.
- Let rest for 5 minutes before slicing and serving.
Notes
- You can substitute vegetables based on preference.
- Use rotisserie chicken for convenience.
- Allow casserole to cool slightly for cleaner slices.
