Ingredients
- 3 lb pork loin roast
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup fresh or frozen cranberries
- 1/2 cup balsamic vinegar
- 1/3 cup honey
- 1/2 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 tablespoon cornstarch (optional, for thickening)
Instructions
- Preheat oven to 375°F (190°C).
- Season pork loin with salt, pepper, and thyme.
- Heat olive oil in an oven-safe skillet over medium-high heat and sear pork on all sides until browned.
- Add minced garlic to the pan and sauté for 30 seconds.
- In a bowl, whisk together cranberries, balsamic vinegar, honey, chicken broth, and Dijon mustard.
- Pour cranberry mixture around the pork in the skillet.
- Transfer skillet to the oven and roast for 60–75 minutes, or until internal temperature reaches 145°F (63°C).
- Remove pork and let rest 10–15 minutes.
- If desired, simmer the pan sauce on the stovetop and stir in cornstarch slurry to thicken.
- Slice pork and spoon cranberry balsamic sauce over the top before serving.
