Description

Cranberry Balsamic Roast Pork is a tender oven-roasted pork loin glazed with a sweet and tangy cranberry balsamic sauce, creating a beautiful balance of savory richness and bright fruit flavor.


Ingredients

  • 3 lb pork loin roast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup fresh or frozen cranberries
  • 1/2 cup balsamic vinegar
  • 1/3 cup honey
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon cornstarch (optional, for thickening)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season pork loin with salt, pepper, and thyme.
  3. Heat olive oil in an oven-safe skillet over medium-high heat and sear pork on all sides until browned.
  4. Add minced garlic to the pan and sauté for 30 seconds.
  5. In a bowl, whisk together cranberries, balsamic vinegar, honey, chicken broth, and Dijon mustard.
  6. Pour cranberry mixture around the pork in the skillet.
  7. Transfer skillet to the oven and roast for 60–75 minutes, or until internal temperature reaches 145°F (63°C).
  8. Remove pork and let rest 10–15 minutes.
  9. If desired, simmer the pan sauce on the stovetop and stir in cornstarch slurry to thicken.
  10. Slice pork and spoon cranberry balsamic sauce over the top before serving.
