A comforting and creamy chicken and rice casserole baked to perfection with tender chicken, fluffy rice, and a rich, cheesy sauce—ideal for a hearty family meal.
Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 can (300g) cream of chicken soup
- 1 cup shredded cheddar cheese
- 1/2 cup grated parmesan cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp chopped parsley (for garnish)
Instructions
- Preheat oven to 180°C (350°F).
- In a skillet, heat olive oil and sauté onion and garlic until soft.
- In a large bowl, combine uncooked rice, chicken broth, heavy cream, cream of chicken soup, sautéed onion and garlic, paprika, thyme, salt, and pepper.
- Stir in the cooked chicken and half of the cheddar cheese.
- Pour the mixture into a greased baking dish and spread evenly.
- Cover with foil and bake for 35-40 minutes until rice is tender.
- Remove foil, sprinkle remaining cheddar and parmesan cheese on top.
- Bake uncovered for another 10-15 minutes until cheese is melted and bubbly.
- Let rest for 5 minutes before serving.
- Garnish with parsley and serve warm.

- Use rotisserie chicken for convenience.
- Add vegetables like peas or carrots for extra nutrition.
- Ensure enough liquid for the rice to cook properly.
- Letting it rest helps the casserole set.
