Ingredients

  • 2 boneless, skinless chicken breasts (about 1.5 lbs)
  • 12 oz spaghetti, broken in half
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10 oz) can diced tomatoes with green chilies
  • 8 oz cream cheese, cubed
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • Chopped parsley (optional, for garnish)


Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add cream of chicken soup, diced tomatoes with green chilies, chicken broth, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Cover and cook on low for 6 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
  4. Remove the chicken, shred it with two forks, and return it to the crockpot.
  5. Add the cream cheese and shredded cheddar cheese, stirring until melted and creamy.
  6. Break the spaghetti in half and stir it into the crockpot, ensuring it is submerged in the sauce.
  7. Cover and cook on high for an additional 25–30 minutes, stirring occasionally, until the pasta is tender.
  8. Garnish with chopped parsley if desired and serve warm.
