Ingredients
- 2 boneless, skinless chicken breasts (about 1.5 lbs)
- 12 oz spaghetti, broken in half
- 1 (10.5 oz) can cream of chicken soup
- 1 (10 oz) can diced tomatoes with green chilies
- 8 oz cream cheese, cubed
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt to taste
- Black pepper to taste
- Chopped parsley (optional, for garnish)
Instructions
- Place the chicken breasts in the crockpot.
- Add cream of chicken soup, diced tomatoes with green chilies, chicken broth, garlic powder, onion powder, paprika, salt, and black pepper.
- Cover and cook on low for 6 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
- Remove the chicken, shred it with two forks, and return it to the crockpot.
- Add the cream cheese and shredded cheddar cheese, stirring until melted and creamy.
- Break the spaghetti in half and stir it into the crockpot, ensuring it is submerged in the sauce.
- Cover and cook on high for an additional 25–30 minutes, stirring occasionally, until the pasta is tender.
- Garnish with chopped parsley if desired and serve warm.

- Stir occasionally after adding the pasta to prevent sticking.
- You can substitute chicken thighs for extra richness.
