Ingredients
- 2 cups all-purpose flour
- 3 large eggs
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon black pepper
- 1 egg (for egg wash)
- 2 tablespoons water
Instructions
- In a large bowl, combine flour and salt. Make a well in the center and add eggs and olive oil. Mix until a dough forms, then knead for 8-10 minutes until smooth. Cover and let rest for 30 minutes.
- Sauté spinach in a pan over medium heat until wilted. Drain excess moisture and finely chop.
- In a bowl, mix spinach, ricotta, Parmesan, nutmeg, and black pepper until well combined.
- Roll out the pasta dough into thin sheets using a rolling pin or pasta machine.
- Place small spoonfuls of filling onto one sheet, spaced evenly apart.
- Whisk together egg and water to make an egg wash. Brush around the filling.
- Place another pasta sheet on top, press around filling to seal, and cut into ravioli.
- Bring a large pot of salted water to a boil. Cook ravioli for 3-4 minutes until they float to the surface.
- Drain and serve with your preferred sauce.
Notes
- Ensure spinach is well-drained to avoid watery filling.
- You can freeze uncooked ravioli on a baking sheet before transferring to a freezer bag.
- Serve with marinara, Alfredo, or sage butter sauce.
