Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon black pepper
  • 1 egg (for egg wash)
  • 2 tablespoons water


Instructions

  1. In a large bowl, combine flour and salt. Make a well in the center and add eggs and olive oil. Mix until a dough forms, then knead for 8-10 minutes until smooth. Cover and let rest for 30 minutes.
  2. Sauté spinach in a pan over medium heat until wilted. Drain excess moisture and finely chop.
  3. In a bowl, mix spinach, ricotta, Parmesan, nutmeg, and black pepper until well combined.
  4. Roll out the pasta dough into thin sheets using a rolling pin or pasta machine.
  5. Place small spoonfuls of filling onto one sheet, spaced evenly apart.
  6. Whisk together egg and water to make an egg wash. Brush around the filling.
  7. Place another pasta sheet on top, press around filling to seal, and cut into ravioli.
  8. Bring a large pot of salted water to a boil. Cook ravioli for 3-4 minutes until they float to the surface.
  9. Drain and serve with your preferred sauce.

  • You can freeze uncooked ravioli on a baking sheet before transferring to a freezer bag.
