Description

A hearty and flavorful casserole made with tender chicken, colorful bell peppers, onions, fajita seasoning, rice, and melted cheese baked together for an easy one-dish dinner.


Ingredients

  • 1.5 lb (700 g) boneless skinless chicken breasts, diced
  • 2 cups cooked rice (white or brown)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, combine diced chicken, bell peppers, onion, olive oil, fajita seasoning, salt, and pepper. Toss to coat evenly.
  3. Spread the mixture evenly in the prepared baking dish.
  4. Cover with foil and bake for 25 minutes.
  5. Remove foil and stir in cooked rice, sour cream, and chicken broth.
  6. Sprinkle shredded cheese evenly over the top.
  7. Return to oven and bake uncovered for an additional 20–25 minutes until bubbly and chicken is fully cooked.
  8. Let rest for 5 minutes before serving.
