A hearty and flavorful casserole made with tender chicken, colorful bell peppers, onions, fajita seasoning, rice, and melted cheese baked together for an easy one-dish dinner.
Ingredients
- 1.5 lb (700 g) boneless skinless chicken breasts, diced
- 2 cups cooked rice (white or brown)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 tablespoons olive oil
- 2 tablespoons fajita seasoning
- 1 cup shredded cheddar or Mexican blend cheese
- 1/2 cup sour cream
- 1/2 cup chicken broth
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a large bowl, combine diced chicken, bell peppers, onion, olive oil, fajita seasoning, salt, and pepper. Toss to coat evenly.
- Spread the mixture evenly in the prepared baking dish.
- Cover with foil and bake for 25 minutes.
- Remove foil and stir in cooked rice, sour cream, and chicken broth.
- Sprinkle shredded cheese evenly over the top.
- Return to oven and bake uncovered for an additional 20–25 minutes until bubbly and chicken is fully cooked.
- Let rest for 5 minutes before serving.

- Serve with tortilla chips, guacamole, or salsa.
- Use rotisserie chicken to save time.
- Adjust spice level by adding jalapeños or hot sauce.
