Ingredients
- 4 chicken thighs or breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup apple cider (non-alcoholic)
- 1/2 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1/2 teaspoon rosemary
- 1 apple, sliced
- 1/4 cup heavy cream (optional)
- Fresh parsley for garnish
Instructions
- Season chicken with salt and pepper.
- Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Sear chicken until golden on both sides, then remove and set aside.
- In the same skillet, add remaining butter and sauté onions until soft. Add garlic and cook for 1 minute.
- Pour in apple cider and chicken broth, scraping up browned bits from the pan.
- Stir in Dijon mustard, thyme, and rosemary.
- Add sliced apples and return chicken to the skillet.
- Cover and simmer for 20–25 minutes until chicken is cooked through.
- Stir in heavy cream if using, simmer for a few minutes, then garnish with parsley and serve.
