Ingredients

  • 4 chicken thighs or breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup apple cider (non-alcoholic)
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1/2 teaspoon rosemary
  • 1 apple, sliced
  • 1/4 cup heavy cream (optional)
  • Fresh parsley for garnish


Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Sear chicken until golden on both sides, then remove and set aside.
  3. In the same skillet, add remaining butter and sauté onions until soft. Add garlic and cook for 1 minute.
  4. Pour in apple cider and chicken broth, scraping up browned bits from the pan.
  5. Stir in Dijon mustard, thyme, and rosemary.
  6. Add sliced apples and return chicken to the skillet.
  7. Cover and simmer for 20–25 minutes until chicken is cooked through.
  8. Stir in heavy cream if using, simmer for a few minutes, then garnish with parsley and serve.
