Ingredients
- 4 bone-in pork chops (about 1-inch thick)
- 2 tablespoons olive oil
- 1 large onion (sliced thinly)
- 2 cloves garlic (minced)
- 1 cup beef broth
- 1/2 cup dry white wine (optional)
- 1 tablespoon soy sauce
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper (to taste)
- 1/2 cup grated Gruyère or Swiss cheese
- 1 tablespoon fresh parsley (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper, then sear them in the hot skillet for 3-4 minutes per side, until browned. Remove the pork chops from the skillet and set aside.
- In the same skillet, reduce the heat to medium. Add the sliced onions and cook, stirring occasionally, for 10-12 minutes, until the onions are caramelized and golden brown.
- Add the minced garlic and cook for another 1-2 minutes, until fragrant.
- Pour in the beef broth, white wine (if using), soy sauce, and Worcestershire sauce. Stir in the dried thyme, scraping up any browned bits from the bottom of the skillet. Let the sauce simmer for 5 minutes to reduce slightly.
- Return the pork chops to the skillet, nestling them into the onion mixture. Spoon some of the sauce over the chops. Cover and let them simmer for 10-12 minutes, or until the pork chops are cooked through (internal temperature should reach 145°F or 63°C).
- Sprinkle the grated Gruyère or Swiss cheese over the pork chops during the last 2 minutes of cooking. Cover again to melt the cheese.
- Remove from heat and let the pork chops rest for a few minutes before serving. Garnish with fresh parsley.
