Description

Frito Cowboy Cabbage is a hearty, flavor-packed skillet dish featuring seasoned ground beef, tender cabbage, tomatoes, and melty cheese topped with crunchy Fritos for a satisfying Tex-Mex inspired meal.


Ingredients

  • 450 g ground beef
  • 1/2 head green cabbage, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tbsp tomato paste
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • Salt to taste
  • Black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 1/2 cups Fritos corn chips
  • 2 tbsp chopped green onions (optional)


Instructions

  1. Heat a large skillet over medium heat and cook ground beef until browned. Drain excess fat.
  2. Add diced onion and garlic; sauté until softened.
  3. Stir in chopped cabbage and cook for 5–7 minutes until slightly tender.
  4. Add diced tomatoes, tomato paste, chili powder, paprika, cumin, salt, and black pepper.
  5. Cook for another 5–8 minutes until cabbage is tender and flavors combine.
  6. Sprinkle shredded cheddar cheese evenly over the mixture.
  7. Cover skillet and cook until cheese is melted.
  8. Top with Fritos just before serving.
  9. Garnish with chopped green onions if desired.
  10. Serve warm directly from the skillet.

Notes

  • Add jalapeños for extra heat.
  • Do not add Fritos too early to keep them crunchy.
  • Can be baked for 10 minutes at 190°C (375°F) after adding cheese for a casserole version.
