Description
Frito Cowboy Cabbage is a hearty, flavor-packed skillet dish featuring seasoned ground beef, tender cabbage, tomatoes, and melty cheese topped with crunchy Fritos for a satisfying Tex-Mex inspired meal.
Ingredients
- 450 g ground beef
- 1/2 head green cabbage, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, drained
- 1 tbsp tomato paste
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- Salt to taste
- Black pepper to taste
- 1 cup shredded cheddar cheese
- 1 1/2 cups Fritos corn chips
- 2 tbsp chopped green onions (optional)
Instructions
- Heat a large skillet over medium heat and cook ground beef until browned. Drain excess fat.
- Add diced onion and garlic; sauté until softened.
- Stir in chopped cabbage and cook for 5–7 minutes until slightly tender.
- Add diced tomatoes, tomato paste, chili powder, paprika, cumin, salt, and black pepper.
- Cook for another 5–8 minutes until cabbage is tender and flavors combine.
- Sprinkle shredded cheddar cheese evenly over the mixture.
- Cover skillet and cook until cheese is melted.
- Top with Fritos just before serving.
- Garnish with chopped green onions if desired.
- Serve warm directly from the skillet.
Notes
- Add jalapeños for extra heat.
- Do not add Fritos too early to keep them crunchy.
- Can be baked for 10 minutes at 190°C (375°F) after adding cheese for a casserole version.
