Ingredients

  • 200 g pitted dates, chopped
  • 250 ml boiling water
  • 1 teaspoon baking soda
  • 75 g unsalted butter, softened
  • 150 g brown sugar
  • 2 eggs
  • 175 g all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 200 ml heavy cream
  • 100 g brown sugar (for sauce)
  • 75 g butter (for sauce)
  • 1 teaspoon vanilla extract (for sauce)


Instructions

  1. Preheat oven to 180°C (350°F) and grease a baking dish.
  2. Place chopped dates in a bowl, pour over boiling water, and stir in baking soda. Let sit for 10 minutes.
  3. Cream butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. In a separate bowl, sift together flour, baking powder, and salt.
  6. Fold dry ingredients into the wet mixture, then add the date mixture and mix until combined.
  7. Pour batter into prepared dish and bake for 30–35 minutes until set.
  8. For the sauce, combine cream, butter, and brown sugar in a saucepan over medium heat. Stir until smooth and slightly thickened, then add vanilla.
  9. Poke holes in the warm pudding and pour some toffee sauce over it. Serve with extra sauce.
