Ingredients
- 200 g pitted dates, chopped
- 250 ml boiling water
- 1 teaspoon baking soda
- 75 g unsalted butter, softened
- 150 g brown sugar
- 2 eggs
- 175 g all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
- 200 ml heavy cream
- 100 g brown sugar (for sauce)
- 75 g butter (for sauce)
- 1 teaspoon vanilla extract (for sauce)
Instructions
- Preheat oven to 180°C (350°F) and grease a baking dish.
- Place chopped dates in a bowl, pour over boiling water, and stir in baking soda. Let sit for 10 minutes.
- Cream butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In a separate bowl, sift together flour, baking powder, and salt.
- Fold dry ingredients into the wet mixture, then add the date mixture and mix until combined.
- Pour batter into prepared dish and bake for 30–35 minutes until set.
- For the sauce, combine cream, butter, and brown sugar in a saucepan over medium heat. Stir until smooth and slightly thickened, then add vanilla.
- Poke holes in the warm pudding and pour some toffee sauce over it. Serve with extra sauce.
