Description

Hawaiian Huli Huli Chicken is a sweet and savory grilled chicken dish marinated in a flavorful blend of pineapple juice, soy sauce, brown sugar, and ginger, then caramelized to perfection.


Ingredients

  • 1 kg chicken thighs or drumsticks
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 2 tbsp rice vinegar
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp sesame oil
  • 1/2 tsp black pepper
  • 2 tbsp chopped green onions (optional garnish)
  • Grilled pineapple slices (optional)


Instructions

  1. In a bowl, whisk pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, garlic, ginger, sesame oil, and black pepper.
  2. Place chicken in a large dish or zip-top bag and pour marinade over it.
  3. Marinate in the refrigerator for at least 2 hours or overnight.
  4. Preheat grill to medium heat.
  5. Remove chicken from marinade and reserve marinade.
  6. Grill chicken for 6–8 minutes per side, turning occasionally.
  7. Brush with reserved marinade during grilling for extra flavor.
  8. Cook until internal temperature reaches 75°C (165°F).
  9. Garnish with green onions and serve with grilled pineapple if desired.

Notes

  • Boil reserved marinade before brushing for food safety.
  • Can be baked at 200°C (400°F) for 35–40 minutes if grilling is not available.
  • Pairs well with rice or macaroni salad.
