Description
Hawaiian Huli Huli Chicken is a sweet and savory grilled chicken dish marinated in a flavorful blend of pineapple juice, soy sauce, brown sugar, and ginger, then caramelized to perfection.
Ingredients
- 1 kg chicken thighs or drumsticks
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 2 tbsp rice vinegar
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp sesame oil
- 1/2 tsp black pepper
- 2 tbsp chopped green onions (optional garnish)
- Grilled pineapple slices (optional)
Instructions
- In a bowl, whisk pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, garlic, ginger, sesame oil, and black pepper.
- Place chicken in a large dish or zip-top bag and pour marinade over it.
- Marinate in the refrigerator for at least 2 hours or overnight.
- Preheat grill to medium heat.
- Remove chicken from marinade and reserve marinade.
- Grill chicken for 6–8 minutes per side, turning occasionally.
- Brush with reserved marinade during grilling for extra flavor.
- Cook until internal temperature reaches 75°C (165°F).
- Garnish with green onions and serve with grilled pineapple if desired.
Notes
- Boil reserved marinade before brushing for food safety.
- Can be baked at 200°C (400°F) for 35–40 minutes if grilling is not available.
- Pairs well with rice or macaroni salad.
