Ingredients
- 1 cup grated zucchini (excess moisture squeezed out)
- 1 cup all-purpose flour (or self-rising flour)
- 1/2 cup plain Greek yogurt
- 1 tsp baking powder (if not using self-rising flour)
- 1/2 tsp salt
- 1 egg (for egg wash)
- Optional toppings: sesame seeds, poppy seeds, everything bagel seasoning
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Grate zucchini and squeeze out as much moisture as possible using a clean towel.
- In a bowl, mix flour, baking powder (if needed), and salt.
- Add Greek yogurt and grated zucchini, mixing until a dough forms.
- Knead lightly until smooth.
- Divide dough into 4 equal portions and shape each into a bagel (form a ring).
- Place on prepared baking sheet.
- Brush with beaten egg and sprinkle with desired toppings.
- Bake for 20–25 minutes until golden and cooked through.
- Cool slightly before serving.
