Ingredients

  • 1 cup grated zucchini (excess moisture squeezed out)
  • 1 cup all-purpose flour (or self-rising flour)
  • 1/2 cup plain Greek yogurt
  • 1 tsp baking powder (if not using self-rising flour)
  • 1/2 tsp salt
  • 1 egg (for egg wash)
  • Optional toppings: sesame seeds, poppy seeds, everything bagel seasoning


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Grate zucchini and squeeze out as much moisture as possible using a clean towel.
  3. In a bowl, mix flour, baking powder (if needed), and salt.
