Description

Soft and chewy chocolate chip cookies stuffed with a rich and creamy cheesecake filling, creating a decadent bakery-style treat perfect for dessert lovers.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1 tsp vanilla extract (for filling)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, beat cream cheese, 1/4 cup sugar, and 1 tsp vanilla until smooth. Chill for 20–30 minutes.
  3. In another bowl, whisk flour, baking soda, and salt.
  4. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  5. Add eggs one at a time, then mix in vanilla extract.
  6. Gradually add dry ingredients to the wet ingredients and mix until combined.
  7. Fold in chocolate chips.
  8. Scoop 2 tablespoons of cookie dough, flatten slightly, add 1 teaspoon of cheesecake filling in the center, and top with another tablespoon of dough. Seal edges well.
  9. Place on prepared baking sheet and bake for 12–15 minutes until edges are golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Chilling the cheesecake filling helps prevent leaking.
  • Do not overbake; centers should remain slightly soft.
  • Store in the refrigerator due to the cream cheese filling.
