Ingredients
- 1 pound boneless, skinless chicken thighs or breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 1/3 cup honey
- 1–2 teaspoons red pepper flakes (adjust to taste)
- 1 tablespoon hot sauce
- 2 cups cooked white or brown rice
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1 avocado, sliced
- 2 tablespoons chopped green onions
- 1 tablespoon sesame seeds (optional)
Instructions
- Season chicken with salt, pepper, paprika, and garlic powder.
- Heat olive oil in a skillet over medium heat. Cook chicken for 5–7 minutes per side until golden and cooked through (internal temperature 165°F / 74°C).
- In a small saucepan, combine honey, red pepper flakes, and hot sauce. Warm gently for 1–2 minutes.
- Slice cooked chicken and toss in warm hot honey sauce until coated.
- Divide cooked rice among serving bowls.
- Top with sliced hot honey chicken, shredded carrots, cucumber, and avocado.
- Drizzle extra hot honey sauce over bowls if desired.
- Garnish with green onions and sesame seeds before serving.
Notes
- Grill the chicken instead of pan-searing for a smoky flavor.
- Adjust spice level by increasing or reducing red pepper flakes.
- Add steamed broccoli or roasted sweet potatoes for extra vegetables.
