Ingredients
- 8 oz linguine or spaghetti
- 1 lb large shrimp, peeled and deveined
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup low-sodium chicken broth or reserved pasta water
- 1/3 cup fresh lemon juice (about 2 lemons)
- 1 teaspoon lemon zest
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves, chopped
- Lemon slices for garnish
Instructions
- Cook pasta according to package instructions in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
- Season shrimp with 1/2 teaspoon salt, pepper, and red pepper flakes.
- Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook 1–2 minutes per side until pink and opaque. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth (or reserved pasta water), lemon juice, and lemon zest. Bring to a gentle simmer for 2–3 minutes.
- Return shrimp to the skillet and toss to coat in the sauce.
- Add drained pasta and Parmesan cheese. Toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.
- Stir in fresh basil and remaining salt. Toss gently until combined.
- Serve immediately garnished with additional basil, Parmesan, and lemon slices.
Notes
- Do not overcook shrimp to keep them tender.
- Substitute whole wheat or gluten-free pasta if desired.
- Add cherry tomatoes or spinach for extra vegetables.
