Ingredients
- 4 large russet potatoes
- 1 lb (450 g) sirloin or ribeye steak, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 tablespoons butter
- 1/4 cup chopped green onions
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes, prick with a fork, and bake directly on the oven rack for 50–60 minutes until tender.
- While potatoes bake, season steak bites with salt, pepper, garlic powder, and smoked paprika.
- Heat olive oil in a skillet over medium-high heat. Sear steak bites for 2–3 minutes per side until browned and cooked to desired doneness. Remove from heat.
- Once potatoes are done, slice them open lengthwise and fluff the insides with a fork.
- Add butter and a portion of shredded cheese to each potato.
- Top with steak bites, remaining cheese, sour cream, green onions, and parsley if using.
- Serve immediately while hot.

- Use ribeye for extra richness or sirloin for a leaner option.
- Potatoes can be baked ahead and reheated.
- Add bacon bits or sautéed mushrooms for extra toppings.
