Ingredients

  • 2 cans (15 oz each) butter beans, drained and rinsed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup vegetable broth
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Stir in sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  4. Add butter beans and gently stir to coat.
  5. Pour in vegetable broth and heavy cream. Bring to a gentle simmer.
  6. Cook for 8–10 minutes until sauce thickens slightly.
  7. Stir in grated Parmesan cheese and cook until melted and creamy.
  8. Taste and adjust seasoning with salt and pepper.
  9. Garnish with fresh basil and serve warm.
