Ingredients

  • 1 large green cabbage, cut into 1-inch thick steaks
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/4 cup fresh basil, chopped


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange the cabbage steaks on the prepared baking sheet. Brush both sides with olive oil and season with salt, pepper, and Italian seasoning.
  3. Roast for 25-30 minutes, flipping halfway through, until the cabbage is tender and caramelized at the edges.
  4. While the cabbage roasts, heat a large skillet over medium heat. Add a tablespoon of olive oil if needed, then sauté the garlic for 1 minute until fragrant.
  5. Add red pepper flakes and chopped sun-dried tomatoes, cooking for another 1-2 minutes.
  6. Pour in the vegetable broth and heavy cream. Stir and bring to a gentle simmer.
  7. Add Parmesan cheese, paprika, and dried thyme. Stir continuously until the sauce thickens, about 3-5 minutes.
  8. Taste and adjust seasoning if necessary.
  9. Place the roasted cabbage steaks on a serving platter and spoon the creamy Tuscan sauce generously over the top.
  10. Garnish with fresh basil and serve immediately.

  • For a lighter version, substitute half-and-half for heavy cream.
