Description

No-Bake Cherry Cheesecake is a creamy, smooth dessert made with a buttery biscuit crust, rich cream cheese filling, and topped with sweet cherry pie filling—no oven required.


Ingredients

  • 200 g graham crackers or digestive biscuits, crushed
  • 100 g unsalted butter, melted
  • 300 g cream cheese, softened
  • 120 g powdered sugar
  • 1 tsp vanilla extract
  • 240 ml heavy whipping cream, cold
  • 400 g cherry pie filling
  • 1 tbsp lemon juice (optional)


Instructions

  1. In a bowl, mix crushed biscuits with melted butter until well combined.
  2. Press the mixture firmly into the bottom of a springform pan to form the crust. Chill for 20 minutes.
  3. In a large bowl, beat the cream cheese until smooth.
  4. Add powdered sugar, vanilla extract, and lemon juice, then mix until creamy.
  5. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture.
  7. Spread the filling evenly over the chilled crust.
  8. Top with cherry pie filling.
  9. Refrigerate for at least 4 hours or until fully set.
  10. Slice and serve chilled.
