Ingredients

  • 200g digestive biscuits or graham crackers, crushed
  • 100g butter, melted
  • 250g cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 1/2 cups fresh strawberries, chopped
  • 2 tbsp sugar (for strawberries)
  • 1 tsp lemon juice


Instructions

  1. In a bowl, mix crushed biscuits with melted butter until combined.
  2. Spoon the mixture into serving cups and press down to form the base. Chill in the refrigerator for 10-15 minutes.
  3. In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  4. In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  5. In a small bowl, mix chopped strawberries with sugar and lemon juice. Let sit for 10 minutes to release juices.
  6. Layer the cheesecake filling over the chilled biscuit base.
  7. Add a layer of strawberry mixture on top.
  8. Repeat layers if desired.
  9. Refrigerate for at least 2 hours before serving.
