Ingredients
- 2 zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 1/2 cup Kalamata olives
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Spread zucchini, bell peppers, red onion, and cherry tomatoes on a large baking sheet.
- Drizzle with olive oil and sprinkle with garlic, oregano, thyme, salt, and pepper.
- Toss to coat evenly and spread in a single layer.
- Roast for 20–25 minutes until vegetables are tender and lightly caramelized.
- Remove from oven and stir in Kalamata olives.
- Sprinkle with crumbled feta cheese and return to oven for 5 minutes.
- Garnish with fresh parsley and serve warm.
Notes
- Cut vegetables into similar sizes for even cooking.
- Add sliced eggplant or mushrooms for variation.
- Serve alongside grilled chicken, fish, or pita bread.
- For a vegan option, omit feta cheese.
