Description
A quick and flavorful one-pan taco rice made with seasoned ground beef, fluffy rice, melted cheese, fresh tomatoes, and cilantro for an easy weeknight meal.
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup long-grain white rice
- 2 cups beef broth or water
- 1 cup shredded cheddar or Mexican-blend cheese
- 1 cup diced tomatoes
- Salt and black pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in onion and garlic and cook until softened.
- Add taco seasoning and mix until beef is evenly coated.
- Stir in rice and broth, bring to a boil, then reduce heat to low.
- Cover and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
- Sprinkle cheese evenly over the top, cover, and cook for 2–3 minutes until melted.
- Remove from heat and top with diced tomatoes and fresh cilantro before serving.
Notes
- Use ground chicken or turkey as a substitute for beef.
- Add jalapeños for extra heat.
- Serve with sour cream or avocado if desired.
