Description

A quick and flavorful one-pan taco rice made with seasoned ground beef, fluffy rice, melted cheese, fresh tomatoes, and cilantro for an easy weeknight meal.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup long-grain white rice
  • 2 cups beef broth or water
  • 1 cup shredded cheddar or Mexican-blend cheese
  • 1 cup diced tomatoes
  • Salt and black pepper to taste
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in onion and garlic and cook until softened.
  4. Add taco seasoning and mix until beef is evenly coated.
  5. Stir in rice and broth, bring to a boil, then reduce heat to low.
  6. Cover and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
  7. Sprinkle cheese evenly over the top, cover, and cook for 2–3 minutes until melted.
  8. Remove from heat and top with diced tomatoes and fresh cilantro before serving.

Notes

  • Use ground chicken or turkey as a substitute for beef.
  • Add jalapeños for extra heat.
  • Serve with sour cream or avocado if desired.
