Peach Tiramisu is a light and fruity twist on the classic Italian dessert, featuring layers of coffee-free soaked ladyfingers, sweet mascarpone cream, and juicy fresh peaches for a refreshing no-bake treat.
Ingredients
- 24 ladyfinger cookies (savoiardi)
- 3 large ripe peaches, peeled and sliced
- 1 cup peach juice or nectar
- 1 tablespoon lemon juice
- 8 oz mascarpone cheese, softened
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon honey (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- In a bowl, toss sliced peaches with lemon juice and honey. Set aside.
- In a large mixing bowl, whip heavy cream until soft peaks form.
- In another bowl, beat mascarpone cheese with sugar and vanilla extract until smooth.
- Gently fold whipped cream into the mascarpone mixture until fully combined.
- Briefly dip each ladyfinger into peach juice and arrange a layer in the bottom of a serving dish.
- Spread half of the mascarpone cream mixture over the ladyfingers.
- Add a layer of sliced peaches.
- Repeat layers with remaining dipped ladyfingers, cream mixture, and peaches.
- Cover and refrigerate for at least 4 hours, preferably overnight, to set.
- Garnish with fresh mint leaves before serving.
Notes
- Use ripe but firm peaches for best texture.
- Chill the mixing bowl before whipping cream for better volume.
- You can substitute canned peaches (well-drained) if fresh are unavailable.
- For added flavor, mix a tablespoon of peach liqueur into the juice.
- Store refrigerated for up to 3 days.
