Description

Peach Tiramisu is a light and fruity twist on the classic Italian dessert, featuring layers of coffee-free soaked ladyfingers, sweet mascarpone cream, and juicy fresh peaches for a refreshing no-bake treat.


Ingredients

  • 24 ladyfinger cookies (savoiardi)
  • 3 large ripe peaches, peeled and sliced
  • 1 cup peach juice or nectar
  • 1 tablespoon lemon juice
  • 8 oz mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey (optional)
  • Fresh mint leaves for garnish (optional)


Instructions

  1. In a bowl, toss sliced peaches with lemon juice and honey. Set aside.
  2. In a large mixing bowl, whip heavy cream until soft peaks form.
  3. In another bowl, beat mascarpone cheese with sugar and vanilla extract until smooth.
  4. Gently fold whipped cream into the mascarpone mixture until fully combined.
  5. Briefly dip each ladyfinger into peach juice and arrange a layer in the bottom of a serving dish.
  6. Spread half of the mascarpone cream mixture over the ladyfingers.
  7. Add a layer of sliced peaches.
  8. Repeat layers with remaining dipped ladyfingers, cream mixture, and peaches.
  9. Cover and refrigerate for at least 4 hours, preferably overnight, to set.
  10. Garnish with fresh mint leaves before serving.

Notes

  • Use ripe but firm peaches for best texture.
  • Chill the mixing bowl before whipping cream for better volume.
  • You can substitute canned peaches (well-drained) if fresh are unavailable.
  • For added flavor, mix a tablespoon of peach liqueur into the juice.
  • Store refrigerated for up to 3 days.
