Ingredients

  • For the Chocolate Layer:
  • 2 cups semi-sweet chocolate chips, melted
  • 1 cup chocolate cookie crumbs (such as crushed chocolate graham crackers or Oreos without filling)
  • 1/4 cup unsalted butter, melted
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp milk (as needed for consistency)
  • For the Peanut Butter Filling:
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 3 tbsp unsalted butter, softened
  • 1/2 tsp vanilla extract
  • Pinch of salt


Instructions

  1. In a bowl, combine melted chocolate, cookie crumbs, melted butter, powdered sugar, vanilla extract, and milk. Mix until a soft dough forms.
  2. Place the chocolate mixture between two sheets of parchment paper and roll into a rectangle about 1/4-inch thick.
  3. In a separate bowl, beat together peanut butter, powdered sugar, softened butter, vanilla, and salt until smooth and creamy.
  4. Spread the peanut butter filling evenly over the chocolate layer, leaving a small border around the edges.
  5. Carefully roll the chocolate layer tightly into a log using the parchment paper to help guide it.
  6. Wrap the roll tightly in plastic wrap and refrigerate for at least 2 hours, or until firm.
  7. Slice into rounds and serve chilled or at room temperature.
