Ingredients
- For the Chocolate Layer:
- 2 cups semi-sweet chocolate chips, melted
- 1 cup chocolate cookie crumbs (such as crushed chocolate graham crackers or Oreos without filling)
- 1/4 cup unsalted butter, melted
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp milk (as needed for consistency)
- For the Peanut Butter Filling:
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 3 tbsp unsalted butter, softened
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- In a bowl, combine melted chocolate, cookie crumbs, melted butter, powdered sugar, vanilla extract, and milk. Mix until a soft dough forms.
- Place the chocolate mixture between two sheets of parchment paper and roll into a rectangle about 1/4-inch thick.
- In a separate bowl, beat together peanut butter, powdered sugar, softened butter, vanilla, and salt until smooth and creamy.
- Spread the peanut butter filling evenly over the chocolate layer, leaving a small border around the edges.
- Carefully roll the chocolate layer tightly into a log using the parchment paper to help guide it.
- Wrap the roll tightly in plastic wrap and refrigerate for at least 2 hours, or until firm.
- Slice into rounds and serve chilled or at room temperature.
Notes
- For a firmer texture, chill overnight before slicing.
- Use natural peanut butter only if well-stirred and thick; otherwise the filling may be too soft.
- You can drizzle melted chocolate on top for extra decoration.
- Store in an airtight container in the refrigerator for up to 5 days.
