Ingredients
- 4 bone-in beef chops (about 1 inch thick)
- 1 tablespoon olive oil
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 cup fresh pineapple (chopped, or canned pineapple chunks, drained)
- 1/2 cup pineapple juice
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for a spicy kick)
- Fresh cilantro or parsley (for garnish)
- Salt (to taste)
Instructions
- Season the beef chops with salt and pepper on both sides.
- Heat the olive oil in a large skillet or frying pan over medium-high heat. Add the beef chops and sear them for 4-5 minutes on each side, until browned. Remove the chops from the skillet and set them aside.
- In the same skillet, add the chopped onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
- Stir in the chopped pineapple, pineapple juice, soy sauce, brown sugar, Dijon mustard, ground ginger, and red pepper flakes (if using). Bring the mixture to a simmer and cook for 5-7 minutes, allowing the sauce to thicken slightly.
- Return the beef chops to the skillet, spooning some of the pineapple sauce over the top. Cover the skillet and simmer on low heat for 10-15 minutes, until the beef is cooked through and tender. The internal temperature of the beef should reach 145°F (63°C).
- Remove the beef chops from the skillet and set aside to rest for a few minutes.
- Serve the beef chops with the pineapple sauce spooned over the top. Garnish with fresh cilantro or parsley.

- You can use boneless beef chops or steaks instead of bone-in for quicker cooking.
