Ingredients
- 200 g red velvet cake crumbs or prepared red velvet cake base
- 90 g unsalted butter, melted
- 450 g cream cheese, softened
- 150 g granulated sugar
- 3 large eggs
- 120 ml sour cream
- 2 tsp vanilla extract
- 250 g fresh strawberries, sliced
- 2 tbsp granulated sugar (for strawberries)
- Red food coloring (optional, for enhanced color)
Instructions
- Preheat the oven to 160°C (325°F) and grease a springform pan.
- Mix red velvet cake crumbs with melted butter and press firmly into the bottom of the pan.
- Beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition.
- Mix in sour cream and vanilla extract until fully combined.
- Pour cheesecake filling over the red velvet crust.
- Bake for 55–60 minutes until the center is set but slightly jiggly.
- Turn off the oven, crack the door, and let cheesecake cool inside for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- Toss sliced strawberries with sugar and spoon over the chilled cheesecake before serving.
