Description

Red Velvet Strawberry Cheesecake is a decadent layered dessert featuring a moist red velvet cake base topped with creamy cheesecake filling and finished with fresh strawberries for an elegant and indulgent treat.


Ingredients

  • 200 g red velvet cake crumbs or prepared red velvet cake base
  • 90 g unsalted butter, melted
  • 450 g cream cheese, softened
  • 150 g granulated sugar
  • 3 large eggs
  • 120 ml sour cream
  • 2 tsp vanilla extract
  • 250 g fresh strawberries, sliced
  • 2 tbsp granulated sugar (for strawberries)
  • Red food coloring (optional, for enhanced color)


Instructions

  1. Preheat the oven to 160°C (325°F) and grease a springform pan.
  2. Mix red velvet cake crumbs with melted butter and press firmly into the bottom of the pan.
  3. Beat cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in sour cream and vanilla extract until fully combined.
  6. Pour cheesecake filling over the red velvet crust.
  7. Bake for 55–60 minutes until the center is set but slightly jiggly.
  8. Turn off the oven, crack the door, and let cheesecake cool inside for 1 hour.
  9. Refrigerate for at least 4 hours or overnight.
  10. Toss sliced strawberries with sugar and spoon over the chilled cheesecake before serving.
