Description
Classic shrimp scampi made with tender shrimp sautéed in a rich lemon butter garlic sauce, finished with parsley and served over pasta or with crusty bread.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 8 oz linguine or spaghetti (optional, for serving)
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
- 1/3 cup fresh lemon juice
- 1/2 cup chicken or seafood broth
- 1/4 cup grated Parmesan cheese (optional)
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Cook pasta according to package instructions if using; drain and set aside.
- Season shrimp lightly with salt and pepper.
- Heat olive oil and 2 tablespoons butter in a large skillet over medium heat.
- Add garlic and red pepper flakes and sauté for 30 seconds until fragrant.
- Add shrimp and cook 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.
- Add lemon juice and broth to the skillet, simmering for 2–3 minutes.
- Stir in remaining butter until sauce is glossy.
- Return shrimp to the pan and toss to coat.
- Serve over pasta or with bread, topped with parsley and Parmesan if desired.
Notes
- Do not overcook shrimp or they will become rubbery.
- Fresh lemon juice gives the best flavor.
- Serve immediately for best texture.
