Description

Steak & Cheese Quesadillas are crispy flour tortillas filled with seasoned sliced steak, sautéed peppers and onions, and plenty of melted cheese, grilled to golden perfection.


Ingredients

  • 1 lb flank steak or sirloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cups shredded Monterey Jack or cheddar cheese
  • 4 large flour tortillas
  • 2 tablespoons butter (for cooking)


Instructions

  1. Season the sliced steak with salt, pepper, chili powder, cumin, and garlic powder.
  2. Heat olive oil in a skillet over medium-high heat. Cook the steak for 2–3 minutes until browned and cooked through. Remove and set aside.
  3. In the same skillet, sauté the sliced bell pepper and onion until softened, about 4–5 minutes.
  4. Wipe the skillet clean and melt a small amount of butter over medium heat.
  5. Place one tortilla in the skillet. Sprinkle cheese evenly over half of the tortilla.
  6. Add a layer of cooked steak and sautéed vegetables over the cheese, then top with a little more cheese.
  7. Fold the tortilla in half and cook for 2–3 minutes per side until golden brown and crispy, and the cheese is melted.
  8. Repeat with remaining tortillas and filling.
  9. Slice into wedges and serve warm.

Notes

  • For extra flavor, add sliced jalapeños or a dash of hot sauce.
  • Serve with sour cream, salsa, or guacamole on the side.
  • Use leftover grilled steak to save time.
  • A cast-iron skillet helps achieve a crispier tortilla.
