Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 6 cups mixed salad greens
  • 1 1/2 cups fresh strawberries, sliced
  • 1/2 cup pecans, toasted
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta or goat cheese (optional)
  • For the dressing:
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Pinch of salt
  • Pinch of black pepper


Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet or grill pan over medium heat and cook chicken for 5–6 minutes per side until fully cooked. Let rest, then slice.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper to make the dressing.
  4. In a large bowl, combine salad greens, strawberries, pecans, and red onion.
  5. Add sliced chicken on top and sprinkle with cheese if using.
  6. Drizzle dressing over salad and toss lightly before serving.
