Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 6 cups mixed salad greens
- 1 1/2 cups fresh strawberries, sliced
- 1/2 cup pecans, toasted
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta or goat cheese (optional)
- For the dressing:
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Pinch of salt
- Pinch of black pepper
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet or grill pan over medium heat and cook chicken for 5–6 minutes per side until fully cooked. Let rest, then slice.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper to make the dressing.
- In a large bowl, combine salad greens, strawberries, pecans, and red onion.
- Add sliced chicken on top and sprinkle with cheese if using.
- Drizzle dressing over salad and toss lightly before serving.
