Description

Strawberry Shortcake Cheesecake Rolls are soft dessert rolls filled with creamy cheesecake filling and fresh strawberries, rolled in tender cake layers for a sweet and elegant treat.


Ingredients

  • 1 prepared vanilla sponge cake or thin sheet cake
  • 225 g cream cheese, softened
  • 120 g powdered sugar
  • 1 tsp vanilla extract
  • 200 ml heavy whipping cream
  • 250 g fresh strawberries, finely chopped
  • 2 tbsp granulated sugar (for strawberries)
  • Powdered sugar for dusting (optional)


Instructions

  1. Lay the sponge cake flat on a clean surface.
  2. In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  3. In a separate bowl, whip heavy cream until stiff peaks form.
  4. Gently fold whipped cream into the cream cheese mixture.
  5. In another bowl, toss chopped strawberries with granulated sugar.
  6. Spread the cheesecake filling evenly over the cake.
  7. Sprinkle strawberries evenly on top.
  8. Carefully roll the cake tightly into a log.
  9. Wrap in plastic wrap and refrigerate for at least 2 hours.
  10. Slice into rolls, dust with powdered sugar if desired, and serve chilled.

  • You can use frozen strawberries if fresh are unavailable.
