Ingredients
- 1 prepared vanilla sponge cake or thin sheet cake
- 225 g cream cheese, softened
- 120 g powdered sugar
- 1 tsp vanilla extract
- 200 ml heavy whipping cream
- 250 g fresh strawberries, finely chopped
- 2 tbsp granulated sugar (for strawberries)
- Powdered sugar for dusting (optional)
Instructions
- Lay the sponge cake flat on a clean surface.
- In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Gently fold whipped cream into the cream cheese mixture.
- In another bowl, toss chopped strawberries with granulated sugar.
- Spread the cheesecake filling evenly over the cake.
- Sprinkle strawberries evenly on top.
- Carefully roll the cake tightly into a log.
- Wrap in plastic wrap and refrigerate for at least 2 hours.
- Slice into rolls, dust with powdered sugar if desired, and serve chilled.
Notes
- Chilling helps the rolls hold their shape.
- You can use frozen strawberries if fresh are unavailable.
