Description
Tartufo is a classic Italian frozen dessert made of chocolate and vanilla ice cream molded into a ball with a rich chocolate or cherry center, coated in cocoa powder or chocolate shell.
Ingredients
- 2 cups chocolate ice cream, slightly softened
- 2 cups vanilla ice cream, slightly softened
- 4 tablespoons chocolate ganache or hot fudge sauce
- 4 maraschino cherries (optional)
- 1/4 cup unsweetened cocoa powder or grated dark chocolate
- 2 tablespoons chopped hazelnuts or almonds (optional)
Instructions
- Line a small bowl or ramekin with plastic wrap, leaving overhang for easy removal.
- Press a layer of chocolate ice cream into the bottom and up the sides of the bowl to create a shell. Freeze for 15–20 minutes to firm up.
- Add a spoonful of ganache or hot fudge sauce into the center. Place a cherry in the middle if using.
- Cover with vanilla ice cream, sealing the center completely. Smooth the top.
- Fold the plastic wrap over the top and freeze for at least 4 hours or until completely firm.
- Unwrap and invert onto a serving plate. Remove plastic wrap.
- Dust generously with cocoa powder or coat with grated chocolate. Sprinkle with chopped nuts if desired.
- Serve immediately.
Notes
- You can use all chocolate ice cream for a richer version.
- For a crunchy shell, drizzle melted chocolate over the frozen tartufo and allow it to harden before serving.
- Prepare up to 2 days in advance and keep tightly wrapped in the freezer.
- Let sit at room temperature for 2–3 minutes before serving for easier slicing.
