Description

A soft and fluffy Filipino ensaymada loaded with three kinds of cheese, brushed with rich butter and sugar, and finished with a decadent cheesy topping—perfectly indulgent and comforting.


Ingredients

  • 4 cups all-purpose flour
  • 1/2 cup sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon salt
  • 1 cup warm milk
  • 3 large eggs
  • 1/2 cup unsalted butter, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Edam or quick-melt cheese
  • 1/3 cup unsalted butter, softened (for topping)
  • 1/4 cup sugar (for topping)


Instructions

  1. In a bowl, combine warm milk, yeast, and 1 tablespoon sugar; let sit for 5 minutes until foamy.
  2. Add remaining sugar, eggs, and salt; mix well.
  3. Gradually add flour and knead until a soft dough forms.
  4. Knead in softened butter until dough is smooth and elastic.
  5. Cover and let rise in a warm place for 1–1.5 hours or until doubled in size.
  6. Divide dough into portions, roll into ropes, and shape into coils.
  7. Place on a greased baking tray, cover, and let rise again for 30 minutes.
  8. Bake in a preheated oven at 170°C (340°F) for 15–18 minutes or until lightly golden.
  9. While warm, brush generously with butter, sprinkle sugar, and top with cheddar, mozzarella, and Edam cheese.
  10. Return to oven for 3–5 minutes until cheese is melted.

Notes

  • Do not overbake to keep ensaymada soft.
  • You may substitute quick-melt cheese with parmesan for a sharper flavor.
  • Best enjoyed warm and fresh.
