Description
A soft and fluffy Filipino ensaymada loaded with three kinds of cheese, brushed with rich butter and sugar, and finished with a decadent cheesy topping—perfectly indulgent and comforting.
Ingredients
- 4 cups all-purpose flour
- 1/2 cup sugar
- 2 1/4 teaspoons instant yeast
- 1 teaspoon salt
- 1 cup warm milk
- 3 large eggs
- 1/2 cup unsalted butter, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Edam or quick-melt cheese
- 1/3 cup unsalted butter, softened (for topping)
- 1/4 cup sugar (for topping)
Instructions
- In a bowl, combine warm milk, yeast, and 1 tablespoon sugar; let sit for 5 minutes until foamy.
- Add remaining sugar, eggs, and salt; mix well.
- Gradually add flour and knead until a soft dough forms.
- Knead in softened butter until dough is smooth and elastic.
- Cover and let rise in a warm place for 1–1.5 hours or until doubled in size.
- Divide dough into portions, roll into ropes, and shape into coils.
- Place on a greased baking tray, cover, and let rise again for 30 minutes.
- Bake in a preheated oven at 170°C (340°F) for 15–18 minutes or until lightly golden.
- While warm, brush generously with butter, sprinkle sugar, and top with cheddar, mozzarella, and Edam cheese.
- Return to oven for 3–5 minutes until cheese is melted.
Notes
- Do not overbake to keep ensaymada soft.
- You may substitute quick-melt cheese with parmesan for a sharper flavor.
- Best enjoyed warm and fresh.
