Description
Refreshing tropical dessert bars with a buttery crust, creamy coconut filling, and a bright lime flavor. These chilled coconut lime bars are sweet, tangy, and perfect for warm weather treats.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup granulated sugar
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup coconut milk
- 1/2 cup fresh lime juice
- 1 tbsp lime zest
- 2 egg yolks
- 1/2 cup shredded coconut (toasted or untoasted)
- 1/2 cup whipped cream (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
- Press mixture firmly into the bottom of the pan to form a crust.
- Bake crust for 8–10 minutes, then let cool slightly.
- In another bowl, whisk together sweetened condensed milk, coconut milk, lime juice, lime zest, and egg yolks until smooth.
- Stir in shredded coconut.
- Pour filling over the crust and spread evenly.
- Bake for 12–15 minutes until set.
- Allow to cool, then refrigerate for at least 2 hours until fully chilled.
- Slice into bars and top with whipped cream if desired.

- Chill thoroughly for clean slices.
- Toast the coconut for added flavor and texture.
