Description

Refreshing tropical dessert bars with a buttery crust, creamy coconut filling, and a bright lime flavor. These chilled coconut lime bars are sweet, tangy, and perfect for warm weather treats.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup granulated sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup coconut milk
  • 1/2 cup fresh lime juice
  • 1 tbsp lime zest
  • 2 egg yolks
  • 1/2 cup shredded coconut (toasted or untoasted)
  • 1/2 cup whipped cream (optional, for topping)


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  3. Press mixture firmly into the bottom of the pan to form a crust.
  4. Bake crust for 8–10 minutes, then let cool slightly.
  5. In another bowl, whisk together sweetened condensed milk, coconut milk, lime juice, lime zest, and egg yolks until smooth.
  6. Stir in shredded coconut.
  7. Pour filling over the crust and spread evenly.
  8. Bake for 12–15 minutes until set.
  9. Allow to cool, then refrigerate for at least 2 hours until fully chilled.
  10. Slice into bars and top with whipped cream if desired.
