Ingredients
- 2 ribeye or sirloin steaks (about 1 inch thick)
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 1/2 tsp paprika
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 4 cloves garlic, smashed
- 1 tbsp fresh rosemary or thyme
Instructions
- Remove steaks from refrigerator 30 minutes before cooking to reach room temperature.
- Pat steaks dry and season both sides with salt, pepper, and paprika.
- Heat olive oil in a heavy skillet over high heat until very hot.
- Sear steaks for 3-4 minutes per side for medium-rare (adjust for desired doneness).
- Reduce heat to medium-low and add butter, garlic, and herbs.
- Tilt the pan and spoon melted garlic butter over the steaks for 1-2 minutes.
- Check internal temperature (130°F for medium-rare).
- Remove steaks from skillet and rest for 5-10 minutes before slicing.
