Ingredients
- 2 cups cooked shredded chicken breast
- 2 (15 oz) cans white beans, drained and rinsed
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (4 oz) can diced green chilies
- 3 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 cup shredded Monterey Jack cheese
- 2 tablespoons chopped fresh cilantro (for garnish)
- Lime wedges for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
- Add minced garlic and sauté for 1 minute until fragrant.
- Stir in cumin, chili powder, paprika, oregano, salt, and black pepper.
- Add shredded chicken, white beans, green chilies, and chicken broth. Stir to combine.
- Bring to a simmer and cook uncovered for 15–20 minutes, allowing flavors to blend.
- Reduce heat and stir in heavy cream and shredded Monterey Jack cheese until melted and creamy.
- Adjust seasoning if needed. Simmer for an additional 5 minutes.
- Serve hot, garnished with chopped cilantro and a squeeze of fresh lime juice.
Notes
- For a thicker chili, mash some of the beans before adding them to the pot.
- Substitute half-and-half for a lighter version.
- This chili freezes well for up to 2 months.
