Description

White Chicken Chili is a hearty and comforting dish made with tender shredded chicken, white beans, green chilies, and warm spices simmered in a creamy, flavorful broth.


Ingredients

  • 2 cups cooked shredded chicken breast
  • 2 (15 oz) cans white beans, drained and rinsed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (4 oz) can diced green chilies
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped fresh cilantro (for garnish)
  • Lime wedges for serving (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Stir in cumin, chili powder, paprika, oregano, salt, and black pepper.
  4. Add shredded chicken, white beans, green chilies, and chicken broth. Stir to combine.
  5. Bring to a simmer and cook uncovered for 15–20 minutes, allowing flavors to blend.
  6. Reduce heat and stir in heavy cream and shredded Monterey Jack cheese until melted and creamy.
  7. Adjust seasoning if needed. Simmer for an additional 5 minutes.
  8. Serve hot, garnished with chopped cilantro and a squeeze of fresh lime juice.

Notes

  • For a thicker chili, mash some of the beans before adding them to the pot.
  • Substitute half-and-half for a lighter version.
